Berry Cream Cake
Vegan Berry Cream Cake
It's Friday so I'm in the mood to break breakfast rules, and this is what I have to show for it: A not-so-guilty yet unbelievably sweet, berry cream cake. Best part? It's vegan. #SCORE Here's what you need berry lovers:
Base/Crust: I used leftover base from my Dark Chocolate cake but if you want to ditch the chocolate flavor here's what I recommend.
- Macadamia
- Dates
- coconut oil
- Agave or any other sweetener
Blend all ingredients together in food processor and press to bottom of spring pan.
Cream filling
- Coconut Cream
- Soaked cashews (at least one hour unless you want a more grainy texture/ can substitute for almonds as well)
- Agave ( I used some maple syrup too)
- Lemon Juice
- Vanilla Extract
Pour first layer in spring pan. Then add a layer of berries of your choice (I used raspberries and blueberries) Add last layer of cream filling on top, covering the fruit.
Garnish with cacao nibs & blueberries and dig in!
