5 Outrageously Delicious Vegan Grilled Cheese Sandwiches that will blow your mind
I'd be lying to you if I say I don't miss cheese; you know, that God awful yet wonderfully smelling piece of meltable goodness. Luckily for me there are plenty of vegan alternatives at the market these days, and thanks to the wonderful world of Pinterest I now am able to make cheese substitutes at home.
Today's National Grilled Cheese Sandwich day so in honor of that I'm bringing to you 5 incredible grilled cheese sandwiches that are of course, 100% plant based. Try not to drool.
1. Lavender-Lemon Blackberry & Ricotta Grilled Cheese Sandwich
I originally found this recipe on KeepitKind but realized I was missing a few ingredients. Because I'm impatient I decided to improvise by substituting certain ingredients and my version turned out pretty freakin' good. Here's what you need
For the Lavender-Lemon Blackberry jam thing:
- 2 cups blackberries
- 1 tbsp water
- 1 tbsp lemon juice
- 1 tablespoon agave syrup
- 1 tbsp cornstarch (or arrowroot powder)
- 1 teaspoon dried lavender
- a pinch of lemon zest
- a dash of salt
- vegan butter
For the Vegan Ricotta:
- 1 cup raw cashews (soaked for at least and hour)
- juice of 1 lemon
- 1 teaspoon nutritional yeast
- 4 teaspoons water
- sea salt to taste
- 1/2 teaspoon of tahini
I'm not going to bother you with steps- you know what to do (insert peace sign emoji)
2. Roasted Broccoli & Cheddar
- broccoli florets (chopped)
- olive oil
- sealt
- cracked pepper
- vegan butter
- vegan cheddar cheese (I recommend Daiya cheese)
- gluten free bread
3. Raspberry Basil & Blue "Cheese"
Okay this one required a bit of creative juice but OMG so worth it. The original recipe called for mozzarella cheese and blue cheese. I used a mixture of vegan mozzarella cheese from Daiya & a home made vegan blue cheese dressing. Combined them together while melted and I got the above. Here's what you need.
- Raspberries
- basil
- gluten free bread
For the Blue Cheese Mozzarella
- 1/4 block of firm or extra firm tofu
- dash of garlic powder
- 1 cup or more (depends on how much you want to make) of veganaise. (vegan mayo)
- 1/4 tsp tahini (sesame seed paste) Can be made without this, but it's better with!
- dash lemon juice
- dash apple cider vinegar
- Daiya Mozzarella cheese
Melt ingredients & stir together.
4. Sun dried Tomato Grilled Cheese
Because even sometimes the simplest dishes come with explosive flavor.
- California Sun Dried tomatoes (QUALITY is everything guys. Don't be stingy at the supermarket)
- Daiya vegan cheddar cheese * shredded
- pinch of sea salt
- gluten free bread
5. Bourbon Caramelized Onion & Mushroom Grilled Cheese
Not pictured, I know. But I prepared this one for dinner last night and just couldn't make it's way to the photo shoot this morning. oops ;) No need to tell you how good this really is. Here's what you need:
- Vegan butter
- mushrooms
- onions
- bourbon
- gluten free bread
- vegan mozzarella cheese
Saute onions & mushrooms with vegan butter. Add a little bourbon. Or a lot. I don't judge. Add to gluten free bread along with melted mozzarella from Daiya. And enjoy!
