Lazy Vegan Sushi Bowl
It's 4am. you're drunk... (kind of), hungry, and too tired to function. We've all been there (I sure as hell have) And if you follow me on snapchat (@zeinabc) you'd know that I had one of those nights not too long ago. Before going vegan I used to love going to this 24/7 sushi spot on south beach after a late night of partying. But 1) I'm not really sure I trust the quality of the ingredients in a 24 hour sushi restaurant like I used to lol, and 2) I have a BIG appetite- and frankly 6 rolls made with only rice, avo and carrots just won't cut it.
Here's a little somethin I put together with ingredients I already have pre cooked/made in my fridge and decided to put together for the perfect vegan sushi bowl!
Ingredients:
- Mixed Quinoa Blend
- brown rice
- carrots
- avocado
- cucumber
- tomatoes (I didn't have avocado and used tomatoes instead but it taste
- sesame seeds
- Pieces of Nori (for the love of God DON'T GET SEAWEED AS REPLACEMENT! Gross lol)
- Tamari (gluten free soy sauce for all my gluten intolerant peeps!)
And voila! Bon Appetite :)
