Raw Vegan Zucchini roll ups
Alright guys I know it's been a hot minute since I've posted a recipe, let alone anything else, on this blog. I never stopped cooking, nor did I quit the plant based lifestyle. Instead I (unexpectedly) took the summer off to focus on bettering all aspects of my life- from building self awareness & identity to improving my overall health. I relearned the importance of nurturing my mind, body, and soul- and for me a big part of that was feeding my body what it needed to function properly.
Around the same time I began that journey of self improvement I started freelancing for an agency as a visual content creator. And oddly enough one of the accounts I help handle is a luxury spring water company, whose water (unlike many other luxury water brands) helps neutralize the body's pH since it's alkaline.
When working with brands I like to have a fine understanding of their product/service, and in this particular case that meant getting a little lesson in body chemistry and nutrition. After doing some digging about the benefits of maintaining healthy pH levels in the body, it didn't take long for me to become completely obsessed with how I could incorporate more alkaline foods in my diet. I come from a long line of family health issues- most of which are preventative health conditions like diabetes and heart disease. This would explain why I take my health so seriously and why I continue to advocate for the prevention of chronic health diseases using proper nutrition ( fun fact, If I HAD to pick another career it'd probably be something in holistic medicine).
Research shows that diets consisting of highly alkaline foods such as fresh vegetables, fruits and unprocessed plant-based sources of protein, result in a more alkaline pH level in the body. Having a properly alkalized body has a lost list of benefits, from better immune function and cancer protection to lowing chronic pain & inflammation.
But anyways point is, I'm trying to stick to this diet regimen to see how I feel after a few months. Here's something quick I whipped up for lunch the other day. Tastes as good as it looks, I promise :)
INGREDIENTS:
- w zucchini (thinly sliced)
- Your favorite hummus (I used this new brand I discovered at TJ Maxx while prop shopping. It's made with sunflower oil which gave it a distinct flavor I thought was nice.)
- Quinoa
- Multi colored carrots.
- Kale
- Sea Salt
